We might only just be into the New Year but already, it looks as if 2019 is shaping up to be the tastiest yet. Our fabulous new menus are proving incredibly popular and more couples are also opting for bespoke menus to really bring their favourite flavours to their celebrations. Bitter and sharp flavours are set to be big news this year and we’ve got a whole host of options for you that will really make your mouth water.
So, what’s so great about bitter and sharp flavours? Well, when they’re included in a well-balanced menu, they make every element come alive. They provide the perfect counterpoint to super sweet or decadently rich dishes, they can refresh your palette and they give you the opportunity to really play with flavours and ingredients. Let’s start with drinks that include a hint of bitterness or a touch of sharpness. We love serving cocktails at any time and, if you want to explore this new trend, what could be better than a Negroni or a dark roast espresso Martini? If you’re a fan of gin, we could mix pink gins with aromatic tonic waters infused with Angostura bark for a real kick. The perfect non-alcoholic option would be our fabulous Cosmo-not, featuring peach, cranberry and a twist of lime.
Moving on to your wedding breakfast, why not start with a salad of pickled beets served with apple and white radish, chicory and celery leaves with a pistachio and cider vinaigrette that’s sure to get everyone’s taste buds tingling.
Chargrilled tiger prawns would be another great choice. Served with a salad of crab and caramelised lemon, this is a wonderfully light dish that your guests will absolutely love. (If prawns are on the menu- what about a classic paella. Not bitter or sharp – but with prawns, slow cooked chicken and saffron – it’s an easy guest pleaser!)
If you’d prefer something a little more informal, wok food absolutely has to be on your foodie shortlist. Spicy fried chicken with green beans and ginger, crispy coleslaw and a citrus dressing is a brilliant unexpected alternative for wedding food and guests love this inventive dish.
